“Mati” would be an ice cream sandwich.
But not just any old ice cream sandwich, mind you!
Leche flan, though not a dessert of Filipino origin, is practically ubiquitous in the country. Some regions have their versions of the recipe and variations in presentation. So while it is familiar sight, it can still surprise you—depending on where you are here.
So it would be soft, so soft that it would easily melt the second it touched the tongue. But since it is ice cream, there would be a texture that isn’t usually found in flans. Their duet would result to such creaminess that is just utter pleasure.
In comes the surprise help from the cookie. But I don’t want it to just be any run-of-the-oven cookie. I want to have an unmistakable Filipino signature to it. I want it to have this terribly light taste but with a great crunch so that it won’t drown in the leche flan ice cream.
When you bite into this sandwich, I want it to taste like a sweet symphony in your mouth. Something familiar and yet it is something new. It is a song that you know and would want to finish every single time you hear it.
